Detox soup
8 Tomatoes (large chopped)
1 red pepper chopped
1 yellow pepper chopped
1 yellow onion chopped
1 Tbsp olive oil
3-4 cloves garlic minced
1 poblano pepper chopped
1 fennel bulb chopped
3 celery stalks chopped
4 cups water
2 cans fired roasted diced tomatoes
1 Tbsp Italian seasonings
Pinch pepper
Janes Crazy Salt 1 tsp
2 tbsp honey
salt pinch to taste
Fresh basil chopped 1 cup
In a large soup pot, heat oil, sautée onions 5 mins, add garlic, sauté 1 min, add peppers, fennel and celery, sauté 2 mins, add tomatoes, diced tomatoes, water, all spices, honey, bring to boil, simmer 20 mins, add basil, simmer 10 mins, cool slightly, ladle in small quantities into food blender/vitamix until all is a smooth creamy soup, serve warm. Eat a couple bowls at least once a month.
